With California's excellent climate and exquisite soil for fig production you will immediately taste the difference in our Black Mission Fig Balsamic Vinegar. Our balsamic is the only one you will find that has a deep earthy flavor much like that of a Cabernet.
Black Mission Figs are allowed to fully ripen and partially dry while still on the tree and are ready for harvest in mid May. The season lasts through the end of November, which allows us to bottle amazing flavorful fig balsamic most of the year.

Our Balsamic Vinegar is produced in Modena, Italy and is the result of the maturation of cooked grape must that has been slowly aged to perfection in casks of oak.
